HAMSTER CARE

I am going to educate you today about what is involved in taking care of a hamster.  Even though I am only a small animal I still have some needs. I think I do not ask for much. But this is what I need:  I want to live by myself. I am a Syrian hamster and we are solitary. When we meet others of our kind we fight which might end in serious injuries or death.  I am nocturnal. Please dont wake me up during the day. When you do I might be grouchy and bite. It is stressful to me and if it happens frequently it might make me sick. You would not like to be woken up in the middle of the night either, would you? I am not a toy and I have moods of my own. When I show you that I dont want to be held at the moment, give me my space. Even though I am small I still have a need for space. We are very active and curious and need to be able to explore. A bin that you can get at any store like Walmart, Target... works well as a cage for me and is by far larger than those small plastic cages at the pet store! I also like play pen time, so let me out to explore in a secured area for a while at night.  There are certain things that are being sold at the pet store that are even dangerous for me! Hamster balls often scare me and even if they do not there are no advantages they offer that my wheel in the cage can not fulfill. Plastic tubes have bad ventilation and bacteria can grow in there when I pee or store food in them. Also they often are too narrow for me and I have to squeeze through a lot. One day I might get stuck!  Cedar bedding should be avoided. It is full with chemicals! Aspen is a good alternative. Give me a lot of bedding so I can dig and burrow in it. At least 5 inches would be nice.  I need a big wheel with a closed running surface, so I dont have to bend my back while running and my feet and toes cant get stuck in mesh.  Unfortunately, there are no hamster foods in America available that do not contain Sugar. But you should try to keep the amount of sugar in the food low and not feed additional sugary treats. I recommend the brand Hazel Hamster (available at a lot of pet stores) or Wild Harvest (available at Walmart). A good addition to my diet are fresh foods like carrot, cucumber, bell pepper, zucchini.. but dont give me too much at once since I might get diarrhea from it.  I clean myself, so please do not try to give me a bath in water. Getting wet might make me sick. You can offer me a sand bath though that will help me groom my fur. When you give me a potty with sand I will probably go pee pee there and you will not have to clean out my whole cage.  Please don't breed me if you do not know about genetics and breeding. There is more to it than most people think. Please take me to the vet when I am sick. Just because I am small and because I am cheap at the pet store does not mean that my life is not worth much.  I do not expect you to be a perfect owner right away but if you stick to those things I am sure we will be fine. Also, the breeder will always be available for further questions and to help you out :)

Bibingkang Kamoteng-Kahoy (Cassava Cake)

Ingredients :

2 cups grated cassava

• 1 can coconut milk
• 1/2 can condensed milk
• 1/2 cup sugar

(Cooking Chart)

Cooking Procedures :

1. Preheat oven to 350°F. Combine all ingredients thoroughly.
2. Divide mixture in two well-greased 8″ x 1″ round baking pans.
3. Bake 60 minutes or until toothpick inserted in the middle comes out clean.  (Cake is good enough to serve as is. For sweeter cakes, choose the following toppings, find below)
4. When is cake is done, after about 45 minutes, pour topping on cassava cake and bake for 25 minutes more, if using Topping 1. (This will allow the topping to soak into the cake)
5. If using Topping 2, bake cassava cake until done (about 60 minutes) before putting on topping. Then broil briefly until top starts to brown. Remove from oven and let cool on rack before slicing into wedges.
6. Serves 8 to 12.

Topping 1

• 1/3 cup brown sugar
• 1/2 cup thick coconut milk

1. Cook brown sugar and coconut milk over low medium heat stirring until thick (about 5 minutes). Pour over cassava cake and bake.

Topping 2

• 1/2 can condensed milk
• 2 tbsp. flour
• 1 tsp. vanilla

1. Blend flour and condensed milk in a pot. Cook stirring over medium heat until thick (about 5 minutes). Add vanilla.
2. Spread on top of fully cooked cake. Broil for a minute or 2, 4″ from the heat. Cake burns easily, remove it immediately just when it starts to brown.

• 1-1/4 cups water
• 3/4 cup brown sugar
• 1 cup flour
• 1 tsp. lye (lihiya) water, for cooking
• grated fresh coconut

Cooking Procedures :

1. Bring water and sugar to a boil. Let cool. Add to flour, stir until smooth. Add lye water (lihiya) and mix well.
2. Boil some water in the steamer. Stir flour mixture to recombine.
3. Fill greased small muffin pans 3/4 full with mixture. Steam for 25 minutes or until toothpick inserted comes out clean. Cool before removing from pans.
4. Before refilling molds for a second batch, stir batter very well because the flour tends to settle at the bottom and may cause thekutsinta to be too soft or soggy on top. Do this before refilling each batch of molds.
5. Loosen sides of molds with spatula before unmolding kutsinta onto plate. Serve with grated fresh coconut sprinkled on top. Do not substitute packaged coconut flakes for freshly grated coconut for this recipe.
6. This recipe may also be steamed in an 8″ square casserole for 30-45 minutes, unmold onto serving plate and cut into squares or diamond shapes.
7. Makes 10pcs of Kutsinta.

Colorless lye water for cooking (lihiya) is sold in small bottles in Asian food stores. It is used in suman sa lihiya which are usually wrapped in banana leaves and insapin-sapin, the multi-layered and muti-colored rice cake. Frozen banana leaves and even fresh ones are now available in Filipino food stores.

           Skinless longganisa is another cured product that is usually served during breakfast. it can be produces from beef, pork, chicken or any other meat depending upon the preference of the consumer. There are several flavours of this meat item. the present formulation of sausages is done for flavour and variety. Vigani's sausage, Lucban's sausage, Pampanga's Best and many others have their own peculiar characteristics and flavour.

            This product is comminuted to proper selection of meat prior to grinding should be practiced. Meat with high amount of soluble protein, high water holding capacity, and emulsifying capacity is a must to have a good product. Lean and fat trimmings which could not be sold can be used for the purpose. However, it could not be denied that good quality meat speaks for the quality of the product. Likewise proper proportion of lean and fat must be considered.

Materials:

           The ingredients and utensils and packaging materials needed for conducting the exercise are as follows:

A. Ingredients

     1. Meat (fresh ground lean meat and back fat)

     2. Salt

     3. Brown sugar

     4. MSG

     5. Prague Powder

     6. Black pepper

     7. Garlic

     8. Anisado wine

     9. Pineapple Juice

     10. Corn Starch

B. Utensils needed

     1. Knives

     2. Chopping Board

     3. Basin (enamel or stainless)

     4. Measuring cup and spoon

    5. Mortar and Pestle

C. Packaging materials

     Plastic Labo cut in small piece

Methodology

     1. Select good quality meat such as pork,beef, chevon, poultry, and back fat from pork.

     2. Remove the skin (pork), bony portion, lymph nodes, and clothed blood.

     3. Slice the meat and pork back fat by cubes prior to  grinding.

     4. Grind meat and back fat

     5. Measure the ingredients according to the proportion required.

    6. Mix first the solid ingredients very well before mixing with ground meat.

    7. Add the liquid ingredients and mix very well.

    8. Add the corn starch to the mixture and mix very well until tacky.

    9. Weigh the mixture to determine the yield.

   10. Weigh 250 gram of the mixture and divide into 8 or 9 parts depending on the desired size.

   11. Wrap in a pre-cut plastic cut wrap or plastic labo and shape as that of the commercially available.

   12. Package in pastic bag, cure for two (2) days inside the refrigerator.

   13. After two days freeze or market the product.
